for a new superfood!

I recently heard that Purple Carrots are set to be the next superfood so thought I would give them a go. Had them with dinner one night and then decided to add them to my favourite mini quiche recipe...

didn't really think this would happen....
They may have been purple but they were still yummy!

  6. Purple veggies are supposed to be very good for us, that purple quiche mix would have freaked me. When I made bulk lots of coleslaw for work, sometimes they would have an orange tinge, must be very juicy carrots or something :)

  8. The quiches tasted fine! When I had them steamed by themselves the taste was kind of hard to explain, they were nice and definitely eatable, perhaps a slightly sweeter taste than orange carrots..

    1. no worries Grace... It's really just a regular quiche recipe but I used purple carrots instead of regular carrots. Cook 150gram diced bacon and chopped onion, combine with grated carrot, grated zucchini, one can corn, 3 eggs, 1/2 cup milk, 130g grated cheese, 1/2cup S-R Flour. Cook in silicone muffin tray and cook for 20-25 mins.
      When I used the purple carrots they tasted fine and as normal, they were just purple so a bit funny looking...
